Cho Cho Cake
Ingredients

2 cup flour (quinoa flour)

1 tsp baking soda

1 1/2 tsp baking powder

2 tsp ground cinnamon

1/2 tsp freshly grated nutmeg

1/2 tsp salt

1 1/2 cup olive oil

6 tbsp raw unprocessed honey

6 tsp flaxseed meal

2 tsp lemon zest
-
1 tsp vanilla extract
-
2 cup christophene/chayote, peeled and grated

Directions

Preheat oven to 350 degrees.

Grease a loaf pan or line with parchment paper.

Combine the dry ingredients and set aside including flaxseed meal

In a medium sized bowl, mix the olive oil and honey then the vanilla extract, lemon zest, and grated christophene/chayote.

Stir in the dry ingredients into the wet. Spread mixture into your loaf pan(s). Bake approximately 60-75 minutes or until a toothpick inserted in the center of the cake comes out clean.

Set aside to cool in the pans. After 20 minutes transfer the cake(s) to a wire rack to cool completely. Glaze top of cake with raw unprocessed honey and serve with your choice of fresh fruit.
