Cho Cho Cake

Ingredients

  • 2 cup flour (quinoa flour)

  • 1 tsp baking soda

  • 1 1/2 tsp baking powder

  • 2 tsp ground cinnamon

  • 1/2 tsp freshly grated nutmeg

  • 1/2 tsp salt

  • 1 1/2 cup olive oil

  • 6 tbsp raw unprocessed honey

  • 6 tsp flaxseed meal

  • 2 tsp lemon zest

  • 1 tsp vanilla extract

  • 2 cup christophene/chayote, peeled and grated

Directions

  1. Preheat oven to 350 degrees.

  2. Grease a loaf pan or line with parchment paper. 

  3. Combine the dry ingredients and set aside including flaxseed meal

  4. In a medium sized bowl, mix the olive oil and honey then the vanilla extract, lemon zest, and grated christophene/chayote.

  5. Stir in the dry ingredients into the wet. Spread mixture into your loaf pan(s). Bake approximately 60-75 minutes or until a toothpick inserted in the center of the cake comes out clean.

  6. Set aside to cool in the pans. After 20 minutes transfer the cake(s) to a wire rack to cool completely. Glaze top of cake with raw unprocessed honey and serve with your choice of fresh fruit.
